Recipe: Citrus Honey Chicken

Looking for something that is lite, refreshing and yummy to go with this beautiful spring weather? Then try our:

Citrus Honey Chicken

½ cup Green Bell Pepper
½ Orange Bell Pepper
2 small Yellow Onions
10 springs of Cilantro Leaves
1 tbsp minced Garlic
2 tbsp Lemon Juice
1 small can of Pineapple Juice
2-3 cups of Orange Juice
2 tbsp Clover Honey
2 Boneless Chicken Breast

Chutney: Slice the bell peppers and onions, and then toss the bell peppers, onions, Cilantro, Garlic and lemon juice in a food processor. Pulse until mixture is chunky.

Sauce: Over medium heat, add the Pineapple Juice, Orange Juice and Honey in a sauce pan. Reduce the mixture until about 1/3 of the original amounts remains.

Chicken: Preheat oven to 350°F. Rub each breast with kosher salt and pepper. Sear on each side, and then place in the oven for 15 minutes to finish cooking.

To Finish: Place the chicken on a plate, and place a small amount of the chutney on the chicken. Spoon the sauce over it and serve!

I know what you are thinking – just because they only have copyright free or expired copyrighted books, then there isn’t anything good to read.  That is where you are wrong!  Yes, you can’t read the current “Who Done its”, or the latest thrillers, but for the most part, any book that was written prior to 1923, you can read.  And that list is HUGE!  You can find the classics, from Alice in Wonderland, Sherlock Holmes, Shakespeare, Mark Twain, Agatha Christie, and Charles Dickens, to the maybe not so famous, such as John Galsworthy and Henry Van Dyke.

So when you are ready to read your next book, think about checking out Gutenberg.org and download your book…for free.

PS…and yes, that is where I have been reading my P G Wodehouse books from.  My local library only has about 5 of his books, but from Gutenberg.org I can download and read over 30 of his books.

Hello world!

I decided to start this blog after a friend of mine, Pam, started hers, and I liked the idea of writing about books and food.  I have always wanted to have a blog, so now is my chance to try it out and see if I have what it takes to become a blogger.

This blog will most about what I know, food, books, Travel, and my dreams, with humor and fun stuff mixed in.  The recipes will come from Brannon and myself (but lets be truthful – mainly Brannon).  The books will be about the books that I am currently reading or have read in the past, while the dreams will be about my dreams.  As for travel, it will mainly be about WDW, but it could be about any of our upcoming trips.
